About the Role

■ Sushi Program Director
Oversee the day-to-day operation of the sushi bar (preparation, cooking, serving)
Always maintaining high standards in taste, appearance and quality
We strictly handle and store seafood properly and comply with hygiene standards.

■ Menu development and innovation
Work with the Owner or Executive Chef to develop and update sushi and seasonal "omakase" menus
While respecting tradition, we offer innovative cuisine that incorporates creative techniques and high-quality ingredients.

■ Team Management
Hiring, training and managing sushi chefs and supporting staff
Fostering a culture of respect, discipline and continuous learning
Performance management and enforcement of business standards

■ Inventory management and cost control
Ordering, receiving and inventory management of sushi ingredients and utensils
Procurement of high-quality ingredients and cost optimization through collaboration with suppliers
Controlling food and labor costs and minimizing waste

■ Health and safety management
Thorough hygiene management system based on HACCP guidelines
Compliance with hygiene and food safety standards through regular checks

Requirements

  • 7-10+ years of practical experience in sushi cooking , including 3+ years of experience as a leader/head chef

  • Familiar with traditional sushi techniques, knife skills, and knowledge of Japanese ingredients

  • Omakase or fine dining experience preferred

  • Knowledge of US or Canadian food safety regulations and seafood standards

  • Excellent organizational, leadership and communication skills

  • Able to carry out work calmly and with guests as the first priority even in a busy environment

  • Eligible to work in the United States or Canada

  • Bilingual ability in Japanese and English

  • Experience working in a Michelin-starred restaurant or fine Japanese restaurant in North America

A major Japanese restaurant group is looking for a head sushi chef to work in their existing restaurant as well as to open a new one.

We are seeking a Head Sushi Chef to lead the sushi program at a fine dining Japanese restaurant in North America . You will be responsible for all aspects of sushi preparation and ensure the highest standards of quality, presentation, sanitation and guest experience.
